The secret is out…

Thank you to everyone who joined us on Valentine’s Day – we love to celebrate with you. As promised, our diners that night were let in on a little secret… and now we’re ready to share it with you too!

On Friday 20 March, we’re hosting something incredibly special at Mudbar — an intimate Wine & Seafood Dinner, celebrating a collaboration between Mudbar and Utzinger that’s been years in the making.
This evening is about more than seafood and wine. It’s about shared ground, shared values, and working alongside people who are deeply passionate about what they produce.

Our Wine Journey

This dinner brings together a seafood-focused menu curated by Don Cameron and Kristian Davey to wave goodbye to the Summer months, paired with wines from Matthias Utzinger and Ethan Taylor.
At the pinnacle of the night, we’ll be releasing something we’re incredibly proud of… the Mudbar x Utzinger Chardonnay.
Creating this together has been a labour of love, from selecting the vineyard where these grapes are grown to the label artwork and everything in between. The grapes were grown by a local producer located beside Mudbar Farm, where much of the produce you enjoy at Mudbar originates — lamb, rabbit, and vegetables grown from the same soil, shaped by the same climate. You could argue they come from the same ‘mud’.
In March, the Mudbar team joined the harvest, picking fruit for the wine. Matthias led the pressing, and we’ve (Ethan) followed the wine’s journey closely as it evolved, tasting the early pineapple notes to the beautifully balanced, textured wine it is today. We can’t wait to tell you more about the artwork and the bottling soon!

This is a high-quality, thoughtfully made wine — stylistic and expressive.
“Aged for nine months in French oak, it’s dry with medium–high acidity, a soft mouthfeel and plenty of texture. Expect ripe nectarines and peaches, a clean lemon finish, and layers of complexity that make it an ideal partner for seafood,” says Ethan (our ‘sip of the week, wine connoisseur).
During the dinner, this Chardonnay will be available for exclusive first tastes by the glass and is included in the wine-paired menu. Bottles will also be available to purchase on the night.

A small but important note: By confirming this booking, you acknowledge this is a set dining experience with a strict schedule: 6.30 pm sit-down and 6.45 pm first course. To ensure smooth service, we cannot adjust the menu for dietary requirements on the day.
