Dining By The Tamar: The Mudbar Experience
28 Seaport Boulevard sits right where Launceston meets the Tamar River, and that address does a lot of the work. Floor-to-ceiling windows, an outdoor deck, and a dining room that turns from bright and easy at lunch to warm and low-lit by dinner — the view is real. But it's not the whole reason people keep coming back.
What keeps a table booked out on a Friday night is the same thing that's true of any good restaurant: the food has to earn its place next to the view. At Mudbar, that starts with where the ingredients come from.
A Kitchen Built On What's Nearby
Our kitchen sources from growers and fishers around Scottsdale and the Tamar Valley, and from Mudbar Farm in White Hills for pasture-raised lamb and seasonal vegetables. The Tamar's proximity means fresh seafood can go from boat to kitchen the same day, oysters, scallops and fish that are on the menu because they were caught nearby, not because they arrived by freight.
The menu changes with the seasons rather than sticking to a fixed print run, so a dish that's on the table in summer might quietly disappear by winter, replaced by something built around what's actually good right now.

The menu blends Asian-inspired technique with modern Australian cooking and a strong grill section, built to work for a quick lunch or a slow dinner.

Tasmanian Wine, Done Properly
The wine list leans into the Tamar Valley and East Coast — the cool-climate whites, pinot noir and sparkling that Tasmania's known for, alongside a shorter run of Australian and international labels for anyone who wants something familiar.
If you're not sure what to order: crisp whites and sparkling suit seafood and lighter dishes, pinot noir and other reds suit the grill. On the cocktail side, the house Mudbar Mojito and Blood Orange Spritz are the two guests come back for.

Getting The Table Right
Best Time
Sunset is the most requested sitting — the light over the water makes it the pick for a celebration. Late afternoon is quieter and just as good if you'd rather not compete for a riverfront table.
Where To Sit
Riverfront tables for the full view, indoor window seats when the wind picks up, and the bar for a quicker, more casual visit.
Groups & Functions
The dining room and function spaces can accommodate up to 200 guests for weddings, corporate events and celebrations, see our Functions page for packages.
